雖然在Rodenbach Brewery超過180年的釀造歷史中(1821年創立),第三代經理人Eugène Rodenbach只在其中佔了短短11年,但這段期間,卻堪稱是Rodenbach Brewery釀造史中最重要的一頁:正是Eugène年輕時在英格蘭南部遊歷,習得了當地使用巨型橡木桶陳放啤酒增添風味,以及混合新舊酒維持酒質一定的手法,並據此改造家族酒廠,才開創了Flanders Red Ale這個類型。
雖然在1998年,酒廠的所有權由Rodenbach家族,轉移到Palm Brewery的手上,但依然維持古法釀造。至今,Rodenbach Brewery廠內,仍存有約300個大小不一的橡木桶"foeder"。其中最古老的,已經有超過150年的歷史了。
Rodenbach的釀造方式,是一種混合發酵法:在主發酵階段,釀酒師會在麥汁中投入包括上層發酵酵母和乳酸菌等約20種菌種的複合酵母進行發酵。待主發酵完結後,酒液會被移至foeder中進行兩年的熟成,以作調和之用。
這些foeder由於長期使用,本身亦寄居了乳酸菌與酒香酵母,因此在熟成過程中,酒液中的有機酸會被進一步轉化為帶有果香的酯類,使風味更具複雜性與深度;而不同foeder的不同菌落生態,又使熟成後的酒液具有不同的風味,因而為調和工作提供了良好的素材。
不過,從2009年開始,Rodenbach也開始以年份酒的概念,在熟成達兩年的foeders中,選出整體表現最佳的一桶,不經調和直接裝瓶發行。從Vintage 2007(Barrel No. 230)開始,至今已發行了四款。而這次要和大家介紹的,便是去年發行的最新一款:Vintage 2010
相較於之前喝過的各款Rodenbach調和產品,Vintage系列由於全使用熟成兩年的老酒,並沒有太刺激的酸香,黑醋栗、覆盆子在焦糖、香草與酒香酵母引出的些許酸腐氣息包圍之下,竟成了台灣人熟悉的話梅味,同時也帶有些許橡木氣息;酒液口感稍厚而溫順,入口先帶出櫻桃、紅酒醋,以及類似發酵乳的乳酸感,中段帶出些許泡泡糖風味,尾段則頗為綿長飽滿,包括香草、奶油,最後甚至演化出類似芋頭酥的奶油芋頭香氣。確實是一次有趣的味覺體驗~
