都說Stout原是"Strong"之意,本身並不特指深色啤酒。但在原料、製程和Porter相似,酒精度較高,被稱為Brown Stout的深色啤酒誕生百年後,Stout這詞也慢慢成了一種深色啤酒的代稱。更在一次世界大戰後趁著英國啤酒酒精度因麥芽稅調升而下滑的機會,佔據了Porter的市場。因此,當70年代末,Porter因為CAMRA和Michel Jackson的提倡,重新回到市場上時,不少19世紀風格的Porter,酒精度反倒比20世紀的Stout更高。倫敦的Fuller's如此,連挪威的Nøgne Ø,都有這麼一款酒精度比自家Porter還低的Havrestout呢~
不過,Nøgne Ø之所以要發行這麼一款低酒精度的燕麥Stout,實在也是有不得已的苦衷:根據酒廠自陳,挪威民眾怕深色啤酒怕得要死。雖然從另一個角度來看,Nøgne Ø的深色啤酒還真的大多是令人望而生畏的怪物(喂)但總得找個能讓挪威民眾入門深色啤酒的方式。於是出現在19世紀末,添加燕麥,具有溫和滋補形象的燕麥Stout,就這樣雀屏中選了。
雖然酒廠自陳這是極少數他們向市場妥協的產品,不過配方上依然可見巧思:在基礎的麥芽與燕麥片之外,酒廠還使用了小麥與燕麥麥芽讓酒體輕量化。酒液呈現極深的棕色,但仍帶透明感。含氣量甚低,酒帽則意外地並不持久。啤酒花的使用量相當低:僅25的IBU值,甚至比燕麥Stout的模範,Samuel Smith家的更低。因此在香氣和風味上都以榖物風味為主:香氣前段以焙烤麥芽咖啡似的焦香為主,繼之以燕麥的奶油調性,但或許受燕麥、小麥麥芽影響,香氣偏甜,成了乳糖風味,最後甚至帶出些許黑糖香氣;入口首先帶出漿果果酸感,繼之以焙烤麥芽的咖啡、巧克力與焦糖風味。口感輕盈但柔順。不單適合挪威人入門,也很適合台灣民眾。
