1711成立於牛津郡Henley on Thames的Brakspear Brewery,雖然在2002年與Wychwood Brewery一同被Refresh UK收購,位在Henley的舊酒廠也遭關閉,旗下產品改由Wychwood Brewery生產。但由於兩廠距離不遠,且Brakspear Brewery知名的Double Drop system也一併拆遷至Wychwood Brewery。因此Brakspear Brewery旗下產品仍大致保持著原始風味。
Double Drop system,是20世紀初年英國啤酒業在釀酒過程中除去渣物(trub,發酵桶底部的沉積物,由熱、冷凝固物、啤酒花渣和死酵母所組成)的流行方式之一。但說穿了其實很簡單,不過是讓麥汁先在上層發酵槽進行初次發酵後,透過略高於沈積物的取水口流入下層發酵槽,而將渣物留在上層發酵槽中而已。不過,由於換桶這個動作,會使得麥汁中的酵母再度接觸氧氣而活躍起來,因此Double Drop system產出的啤酒,也有殘糖較低,風味乾爽的特色,以及較高的雙乙醯(Diacetyl)含量帶來的奶油糖香氣與絲滑口感。所以這回我也特別由使用Double Drop system的Brakspear Bitter開始試起~
使用Fuggles & Styrians Goldings的它,瓶口香氣仍是以酵母與麥芽香氣為基調:以堅果、奶油與淺色麥芽香氣為主,佐以些許檸檬皮與橘子醬風味。官方說明中雖指出這款啤酒混用了淺色麥芽、結晶麥芽與巧克力麥芽,但酒色僅略深於純用淺色麥芽的Marston's Pedigree,顯見深色麥芽的用量甚低。含氣量是標準的少,酒帽消失的也快。入杯後橘子醬的香氣較為明顯,佐以蜂蜜、焦糖與奶油香氣。入口先帶出水梨、橘子醬等酒花風味,中段轉向麥芽與酵母帶出的焦糖、奶油氣息,尾段帶堅果香氣,以及類似青草茶般的澀感。值得一提的是,這澀感相當持續而有生津效果。應該是個人目前喝過的Bitter中苦澀感最直接的...
